Belgian Endive
Dips: Guacamole, Blue Cheese, and Salsa

2ripe avocados
juice of one lemon
1/2small red onion, diced
1tomato, seeded and diced
salt to taste
hot pepper sauce to taste

Mash the avocados, add the other
ingredients, and mix.

Blue Cheese Dip
1/2pint sour cream
1/4cup milk
1/3cup blue cheese, crumbled
2tablespoons red onion, finely diced

In bowl, combine all the ingredients
well. Serve chilled.

and chopped
1large clove garlic, peeled
and chopped
1red bell pepper,
seeded and chopped
2large tomatoes, peeled
and finely chopped
1cucumber, peeled and
finely chopped
2tablespoons olive oil
juice of one lemon or lime
salt and pepper to taste
cilantro or parsley for garnish.

In bowl, combine all the ingredients well.
Garnish with parsley or cilantro.
